You're right, we should provide a way to rename the document once it's uploaded. We don't currently do that. I'll add it to our work queue, though — it's a good idea. The "stray piece of metadata" is the title of the PDF document, which is generally set in PowerPoint (or whatever tool you created the PDF with).
